Chocolate Zucchini Muffins

Ingredients

  • 1/3 cup boiling water
  • 2 cups shredded zucchini
  • 1 cup flour
  • 1/2 cup whole wheat flour
  • 1/2 cup cocoa
  • 3/4 cup sugar
  • 1-1/4 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 cup canola oil
  • 3/4 cup applesauce, unsweetened
  • 1 teaspoon vanilla

Directions

Preheat oven to 350 degrees. In a large bowl, pour boiling water over zucchini. Add all of the other ingredients and stir until well combined. Line muffin pans with paper muffin cups. Fill 12 muffin cups. Bake for 25-30 minutes.

Yield: 12 muffins (1 serving = 1 muffin)
