Fish Tacos with Chipotle Lime Cilantro Slaw

Ingredients:
- Fish:
- 12 (16 oz.) fish fillets
- 1 package low sodium fajita seasoning
- 1 teaspoon coconut oil
- Slaw:
- 1 package cole slaw mix
- 1/4 cup light mayo
- 1/4 cup lime juice
- 1/2 cup plain greek yogurt
- 1/2 chipotle pepper (in adobo sauce)
- 1/2 teaspoon adobo sauce
- 1/4 cup cilantro
- For serving:
- 8 small white corn tortillas
- diced tomatoes
- sliced avocado
Instructions:
- Sprinkle fajita seasoning on fish, let marinade while making slaw.
- Mix slaw dressing together in a food processor and add to 1 package cole slaw mix.
- Sauté fish in 1 teaspoon of coconut oil until cooked through. Flake with a fork. (Fish is also delicious grilled!)
- Divide fish between tortilla shells and top with slaw, diced tomatoes and sliced avocado.
