Homemade Marinara
Serves 8 (½ cup serving)
Ingredients
- 8 large tomatoes or 28 oz. can of no-salt-added crushed tomatoes
- 1 cup diced onion
- ¼ cup chopped garlic
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- ¼ teaspoon crushed red pepper
- 1 bay leaf
- ¼ teaspoon ground black pepper
- 1 cup no-salt-added tomato puree
- ¼ cup apple juice concentrate or 1 tablespoon sugar substitute
- 2 sprigs of fresh basil (if desired)
Directions
- Cut, grate or puree tomatoes as desired.
- Brown onions and garlic in sauté pan on medium to medium-high heat.
- Add tomatoes and spices. Cook until thickened.
- When using whole tomatoes, use a food processor or blender to blend tomato mixture with apple juice concentrate. When using crushed tomatoes, stir in apple juice concentrate.
- Finish with fresh basil if desired.
