Strawberry Chicken Salad

Ingredients

Salad

  • 4 c. romaine lettuce
  • 4 c. arugula or spinach
  • 2 c. strawberries, quartered
  • 1/3 c. red onion, sliced
  • 12 oz. cooked skinless, boneless chicken breast, sliced
  • 2 tbsp. unsalted cashews, halved
  • 1/2 c. (2 oz.) crumbled blue cheese

Dressing

  • 1 tbsp. honey, agave nectar or sugar
  • 2 tbsp. red wine vinegar
  • 1 tbsp. water
  • 1/8 tsp. salt
  • 1/8 tsp. ground black pepper
  • 2 tbsp. extra-virgin olive oil or cold pressed sunflower oil

Preparation

  • To prepare dressing, combine first five ingredients in a small bowl.
  • Gradually drizzle in oil, stirring with a whisk.
  • To prepare salad, combine first five ingredients in a bowl; toss gently.
  • Distribute about 2 c. salad among four plates.
  • Top each serving with cashews and 2 tbsp. cheese.
  • Drizzle 4 tsp. dressing over each.
  • Serves 4.
