Strawberry Chicken Salad

Ingredients
Salad
- 4 c. romaine lettuce
- 4 c. arugula or spinach
- 2 c. strawberries, quartered
- 1/3 c. red onion, sliced
- 12 oz. cooked skinless, boneless chicken breast, sliced
- 2 tbsp. unsalted cashews, halved
- 1/2 c. (2 oz.) crumbled blue cheese
Dressing
- 1 tbsp. honey, agave nectar or sugar
- 2 tbsp. red wine vinegar
- 1 tbsp. water
- 1/8 tsp. salt
- 1/8 tsp. ground black pepper
- 2 tbsp. extra-virgin olive oil or cold pressed sunflower oil
Preparation
- To prepare dressing, combine first five ingredients in a small bowl.
- Gradually drizzle in oil, stirring with a whisk.
- To prepare salad, combine first five ingredients in a bowl; toss gently.
- Distribute about 2 c. salad among four plates.
- Top each serving with cashews and 2 tbsp. cheese.
- Drizzle 4 tsp. dressing over each.
