Spinach Salad with Sugar Snap Peas and Carrot

Ingredients
- 4 teaspoons extra-virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon white wine vinegar
- 1/4 teaspoon kosher salt
- 1/4 teaspoon freshly ground black pepper
- 1/8 teaspoon sugar
- 1 cup sliced sugar snap peas
- 1/2 cup shredded carrot
- 1/2 cup sliced radishes
- 1 (5-ounce) package baby spinach
Preparation
- Combine first 6 ingredients in a bowl, stirring with a whisk.
- Combine peas, carrot, radishes, and spinach in a bowl. Add oil mixture; toss to combine.
Yield: Serves 4 (serving size: about 1 1/4 cups)
