Salad with Sunflower Oil
Salad
- 4 c. finely chopped kale (ribs removed)
- ¼ c. sunflower seeds
- ¼ c. pumpkin seeds
- ½ c. cooked quinoa
- ½ c. dried cranberries
- 1 avocado, peeled and chopped
- ½ c. feta cheese crumbles
Vinaigrette
- 3 tbsp. apple cider vinegar
- 2-3 tbsp. honey
- 3 tbsp. lemon flavored sunflower oil
Preparation
- Place kale, seeds, quinoa, cranberries, feta cheese and avocado in a large bowl.
- In a small bowl, whisk together apple cider vinegar, honey and lemon flavored sunflower oil.
- Pour vinaigrette over salad ingredients.
- Toss gently and serve or refrigerate.
