Roasted Curried Cauliflower

Ingredients
- 6 cups cauliflower florets (about 1 medium head)
- 1½ tablespoons olive oil
- ½ teaspoon Madras curry powder
- ¼ teaspoon kosher salt
Directions
- Preheat oven to 475º.
- Combine all ingredients on a jelly-roll pan; toss well to coat. Bake at 475º for 18 minutes or until browned and crisp-tender, stirring occasionally.
