Raisin & Walnut Scones

Ingredients:

  • 2 cups all-purpose flour
  • 4 tablespoons white sugar, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon grated lemon zest
  • 1/2 cup butter, cubed
  • 3/4 cup and two tablespoons chopped walnuts
  • 1/2 cup raisins
  • 3/4 cup and one tablespoon buttermilk

Instructions:

  1. In a large bowl, combine butter, flour, two tablespoons sugar, baking powder, baking soda, salt and lemon peel.
  2. Add in all of the raisins and all but two tablespoons of the walnuts. Mix in 3/4 cup of buttermilk with a fork.
  3. Heat oven to 425 degrees.
  4. Roll or pat out 3/4 inch thick. Cut into 3 inch triangles. Place, spaced one inch a part on a greased baking pan. Brush tops with remaining one tablespoon of buttermilk and sprinkle with the remaining sugar and nuts.
  5. Bake in oven for about 15 minutes or until nicely browned. Serve warm.
