Pork Tenderloin in a Crock-Pot
Ingredients
- 1-1/4 cups sweet potatoes, cubed
- 1-1/4 cups Yukon gold potatoes, cubed
- 1/2 teaspoon dried oregano
- 1/2 teaspoon paprika
- 1/4 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 1 pound frozen pork tenderloin (or 4 lean pork chops)
- 1/2 cup low sodium chicken broth
Directions
Spray slow cooker with non-stick spray. Place potatoes in slow cooker. In small bowl, combine spices and mix well. Rub mixture onto pork. Place pork on top of potatoes. Pour broth over pork and potatoes.
Cover; cook on low setting for 8-9 hours.
Yield: 4 serves (1 serving = 1/4 recipe)
