Orange-Spiced Sweet Potatoes

Ingredients

  • 2 pounds sweet potatoes, peeled and diced
  • 1/4 cup Brown Sugar Splenda Blend for baking
  • 1/4 cup light tub margarine
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon grated orange peel Juice of
  • 1 medium orange
  • 1 teaspoon vanilla Chopped toasted pecans (optional)

Directions

Place sweet potatoes, Splenda Brown Sugar Blend, margarine, spices, orange peel, orange juice and vanilla in crockpot. Cover; cook on LOW for 4 hours or on HIGH for 2 hours, or until potatoes are tender. Sprinkle with pecans before serving if desired.
