Healthy Stuffing

Ingredients

  • I Tablespoon olive, canola, or Smude’s sunflower oil
  • 14 oz. stuffing (plain bread; no seasoning)
  • ½ cup chopped onion
  • ½ cup diced celery
  • ½ cup diced carrots
  • ½ cup diced mushrooms
  • 2-3 cloves garlic
  • 2 ½ cups broth; chicken or vegetable (unsalted)
  • 2 tsp. poultry seasoning
  • Pepper to taste

Directions

Preheat oven to 350 degrees. Heat a large sauté pan; add oil. Add vegetables and garlic, and cook until vegetables are tender. Remove from heat; transfer to bowl and allow to cool slightly.

In a large bowl toss bread stuffing and vegetables together with pepper and poultry seasoning. Add broth, mixing until moist but not soaking.

Spray casserole dish with cooking spray and put stuffing mixture into dish. Cover with foil and bake 20-25 minutes. Uncover and cook an additional 10 minutes or until slightly crispy on top.

Makes 16 (1/2 cup) servings.
