Green Pea Salad
Recipe adapted from Well Plated.
Ingredients
- 3 bacon strips
- ½ c. plain non-fat Greek yogurt
- 2 tbsp. honey
- 1 tbsp. apple cider vinegar
- ½ tsp. salt
- ¼ tsp. black pepper
- 16 ounces (about 2 c.) green peas, shelled
- ¼ c. whole roasted almonds, roughly chopped
- ½ small red onion, finely chopped
Directions
Prepare bacon according to package directions. Set bacon between paper towels and pat dry; chop into small pieces. In a large mixing bowl, stir together Greek yogurt, honey, apple cider vinegar, salt and pepper. Add peas, almonds and red onion. Toss gently to coat and serve chilled.
Yield: 4 servings
