Greek Yogurt Pancakes

Ingredients
- 1 cup all-purpose flour (For more fiber, use whole wheat flour.)
- 12 oz. Greek yogurt
- 2 eggs
- 2 tsp. baking soda
Directions
- Whisk yogurt in a bowl until creamy; add egg and whisk to combine.
- Whisk flour and baking soda to together in a bowl; add yogurt mixture and stir until smooth.
- Heat a sprayed griddle over medium heat. Drop batter by large spoonfuls onto the griddle and cook until bubbles form and the edges are dry, 3-4 minutes. Flip and cook until browned on the other side, 2-3 minutes.
- Repeat with the remaining batter.
