Fast Farro Salad
Recipe adapted from Family Food on the Table.
Ingredients
- 1 ½ c. farro (or pearled barley)
- 2 tsp. sunflower oil
- 1 small yellow bell pepper, diced
- 1 small zucchini, diced
- 1 ½ c. cherry tomatoes, halved
- ½ tsp. salt
- ¼ tsp. pepper
- 1 tsp. apple cider vinegar
- 3 green onions, thinly sliced
Preparation
- Cook farro according to package directions.
- Meanwhile, chop veggies and heat 1 tsp. oil in a sauté pan over medium heat.
- Add bell pepper and sauté for 2 min.
- Add zucchini and season with salt and pepper. Sauté veggies until tender, about 5 min.
- Add tomatoes and cook until heated through, about 2 min.
- Transfer farro to a bowl and top with veggies.
- Drizzle apple cider vinegar and remaining oil; mix well and season with salt and pepper.
- Garnish with chopped green onions.
