Crispy Oatmeal Chocolate Chip Cookies
Ingredients
- 3/4 cup canola oil
- 1 cup white sugar
- 1 cup packed brown sugar
- 1 teaspoon vanilla
- 1/4 cup silken tofu
- 1/4 cup soy milk
- 1 1/2 cup all-purpose flour
- 1/2 cup soy flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup quick oatmeal
- 1 cup chocolate chips
- 1/3 cup unsalted soy nuts, crushed
Directions
Preheat oven to 350 degrees.
Mix oil and sugars in a large mixing bowl. Add vanilla, tofu, and milk. In a separate bowl, stir together flours, soda, baking powder, and salt. Gradually add dry mixture to creamed mixture. Stir in oats, chocolate chips, and soy nuts until well-blended.
Bake on a lightly sprayed cookie sheet for 11–12 minutes.
Yield: Approximately 6 dozen cookies (1 serving = 1 cookie)
