Cranberry Sauce

Ingredients

  • 2 cups of low-calorie cranberry juice
  • 2 Tablespoons cornstarch
  • 1 ½ cups dried cranberries
  • 2/3 cup sugar-free or low sugar apricot fruit spread (i.e. Polaner all Fruit Sugar-Free or Smuckers Low Sugar Preserves)

Directions

Whisk together cranberry juice and cornstarch in a medium saucepan. Bring to a simmer over medium heat; cook for 5 minutes, whisking occasionally.

Stir in dried cranberries and fruit spread. Reduce heat to low and continue to cook another 8-10 minutes or until cranberries are rehydrated.

Yield: 2 ½ cups or 10 servings (1 serving = ¼ cup)
