Chocolate Bark with Edamame and Cherries

Ingredients

  • 6 oz dark chocolate
  • 2/3 cup shelled edamame, roasted
  • ¼ cup dried tart cherries

Directions

Line a 9-inch square pan with foil. Place the dark chocolate in medium microwave-safe bowl. Microwave on High 1-2 minutes until almost melted, stirring every 30 seconds. Spread chocolate in pan. Sprinkle with edamame and dried cherries. Chill 15 minutes.

Serves 12

How to roast edamame:

To roast edamame, make sure they are completely ice-free and dry. Then preheat your oven to 375 degrees. Mix the pods with olive oil and your desired seasonings. Then put them evenly on the tray in the oven. They should cook for about a total of 35 minutes, with intervals of stirring about every ten minutes.
