Chocolate Banana Zucchini Bread

Ingredients
- 3/4 cup whole wheat flour
- 3/4 cup all-purpose flour
- 1-1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 cup cocoa powder
- 3 bananas, mashed
- 1 egg, beaten
- 1/4 cup zucchini
- 1/4 cup applesauce
- 1/2 cup sugar
- 1 teaspoon vanilla
- 1/4 cup chocolate chips
Directions
- With non-stick spray, spray the bottom and 1/2 inch up the sides of an 8x4x2-inch loaf pan, set aside.
- In a medium mixing bowl combine the flour, baking powder, baking soda, and cinnamon. Make a well in the center of dry mixture, set aside.
- In another bowl combine the egg, bananas, zucchini, sugar, and vanilla. Add egg mixture all at once to dry mixture. Stir just till moistened (batter should be lumpy). Fold in chocolate chips.
- Spoon batter into the prepared pan.
- Bake in 350 degree oven 50-55 minutes or until a wooden tooth pick inserted near the center comes out clean.
- Cool in pan on wire rack for 10 minutes. Remove loaf from pan, cool on rack.
Yield: 16 servings (1 serving = 1 slice or 1/16th of loaf)
