Chicken Stroganoff in a Crock Pot

Ingredients

  • 1 pound chicken breasts, cut into 1/2-inch cubes
  • 1/2 cup chopped onions
  • 1 (4-ounce) can mushroom stems and pieces, not drained
  • 2 teaspoons minced garlic
  • 3 cups reduced sodium chicken broth
  • 4 cups medium egg noodles
  • 1 cup fat-free sour cream

Directions

Spray a crock pot with nonfat cooking spray.  In the pot, stir the chicken, onions, mushrooms, garlic, and chicken broth together until well mixed.  Cover and cook on low for 4-6 hours, or on high for 2-3 hours.  If cooking on low, turn the temperature to high before stirring in the noodles.  Stir in the noodles, cover and cook for another 30 minutes, or until noodles are cooked.  Stir in the sour cream and serve.

Yield: 7 servings (1 cup = 1 serving)
