Cheese & Spinach Stuffed Chicken

Ingredients
Filling
- ½ c. goat cheese, softened
- ¼ c. tomatoes, chopped
- 1 ½ c. fresh spinach, packed, thinly sliced
- ¼ tsp. salt
- ¼ tsp. pepper
Chicken
- 4 boneless, skinless chicken breasts (5 oz. each)
- 2 tsp. sunflower oil
- ½ tsp. salt
- ½ tsp. ground pepper
Preparation
- Preheat oven to 375 degrees; combine filling ingredients in a medium bowl.
- Insert a knife into the thickest part of each chicken breast and cut 2-3” pocket.
- Stuff each chicken breast with a fourth of the filling.
- Rub chicken breasts with sunflower oil; season with salt and pepper.
- Heat a large nonstick, ovenproof skillet over medium-high heat.
- Cook chicken breasts until golden brown, about 3 min. per side.
- Place skillet in the oven and bake until chicken is cooked through, 10-12 min.
- Cool for 10 min.
Serves 4.
