Apple Cheesecake - Light

Ingredients
- 1 cup low fat cottage cheese
- 2 (8-ounce) packages light cream cheese, softened
- 3/4 cup sugar or 3/8 cup Splenda Blend for Baking
- 2 tablespoons flour
- 4 egg whites
- 2 tablespoons skim milk
- 1/4 teaspoon vanilla extract
- 2 apples, peeled and chopped
- Cinnamon and sugar
Directions
Spray bottom of 9-inch springform pan or 18 muffin papers with non-stick spray.
Spread apples in bottom of pan and sprinkle on cinnamon and sugar to taste. Blend cottage cheese in blender until smooth. Next, beat cottage cheese, cream cheese, sugar and flour until well blended. Add egg whites, one at a time, mixing well after each. Blend in milk and vanilla and pour into pan.
Bake at 325 degrees for 45-50 minutes (20 minutes for muffins), until center is almost set. Loosen rim of pan and remove when cool. Chill
