Apple-Walnut Muffins

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 3/4 cup sugar
  • 1/3 cup chopped walnuts
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon

Additional Ingredients

  • 3/4 cup fat-free milk
  • 3/4 cup reduced-fat plain yogurt
  • 1/4 cup canola oil
  • 1 large apple – peeled and chopped (can substitute dried fruit for fresh apples)

In a large bowl, combine all the dry ingredients. You can store in an airtight container for up to 2 months.

Directions

  1. Place dry ingredients in a bowl.
  2. Whisk the milk, yogurt and oil.
  3. Stir into dry ingredients just until moistened.
  4. Coat muffin cups with cooking spray or use foil liners; fill three-fourths full with batter.
  5. Bake at 400 degrees for 10-12 minutes or until a toothpick inserted near the center comes out clean.
  6. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Yield: 12 muffins (1 serving = 1 muffin)
